Mango Lassi (yogurt drink)

Mango Lassi is the perfect cooler on a hot day. You can add extra sweetness to it (if you like) with sugar or honey. If you're making it for kids and want to avoid the sugar, use unsweetened fruit juice or pulp. This recipe makes 4 glasses of lassi.

Cook Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • 3 glasses of yogurt (use a glass you will serve the lassi in, to measure)
  • 1 glass of crushed ice (measure as above)
  • 1 glass ripe mango pieces or pulp
  • Sugar to taste/unsweetened fruit juice or pulp
  • 1 tsp slivered almonds for each glass
  • A dollop of thick cream for each glass (optional)

Preparation:

  1. Put the yogurt, mango, ice and sugar/juice/pulp in a blender and blend till smooth.
  2. Pour out into glasses, top with a dollop of cream each and slivered almonds and serve.

Lemon Ginger Squash - Lemon Ginger Cordial - Lemon Ginger Juice Concentrate

This concentrate makes a really tasty, thirst-quenching drink that is perfect for summer! Make up a bottle of it and keep in your fridge for those hot days.

Ingredients:

  • 12 lemons, juice removed and strained
  • Rind of 1 lemon
  • 3" piece of ginger, grated and then pulp squeezed to remove juice
  • 8 cloves
  • 1/2 a nutmeg
  • 1 tbsp aniseed/ fennel seeds/ saunf
  • 1 kg sugar

Preparation:

  1. Put the cloves, nutmeg and aniseed in a clean, dry coffee grinder and grind to a fine powder.
  2. Put 1 liter of water in a deep pan and bring to a boil on high heat. Add the powdered spices, simmer and boil for 5 minutes.
  3. Add the sugar and boil till you get syrup of half-thread consistency. See How to Make Sugar Syrup for more details. Once syrup is ready, remove from heat and allow to cool. The spice sediment will settle during this time.
  4. Strain the spiced syrup into another bowl. Add the lemon and ginger juice to the syrup and mix well.
  5. Pour into a bottle (use a funnel) and store in the refrigerator.
  6. To serve, pour Lemon Ginger Squash into a tall glass, according to taste and add crushed ice and chilled water. Stir, garnish with a slice of lime/ lemon and serve!

Annie's Fruit Salsa and Cinnamon Chips

Ingredients:

  • 2 kiwis, peeled and diced
  • 2 Golden Delicious apples - peeled, cored and diced
  • 8 ounces raspberries
  • 1 pound strawberries
  • 2 tablespoons white sugar
  • 1 tablespoon brown sugar
  • 3 tablespoons fruit preserves, any flavor
  • 10 (10 inch) flour tortillas
  • butter flavored cooking spray
  • 2 tablespoons cinnamon sugar

Preparation:

  1. In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
  4. Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Peppered Shrimp Alfredo

Ingredients:

  • 12 ounces penne pasta
  • 1/4 cup butter
  • 2 tablespoons extra-virgin olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 pound portobello mushrooms, diced
  • 1 pound medium shrimp, peeled and deveined
  • 1 (15 ounce) jar Alfredo sauce
  • 1/2 cup grated Romano cheese
  • 1/2 cup cream
  • 1 teaspoon cayenne pepper, or more to taste
  • Salt and pepper to taste
  • 1/4 cup chopped parsley

Preparation:

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Meanwhile, melt butter together with the olive oil in a saucepan over medium heat. Stir in onion, and cook until softened and translucent, about 2 minutes. Stir in garlic, red pepper, and mushroom; cook over medium-high heat until soft, about 2 minutes more.
  3. Stir in the shrimp, and cook until firm and pink, then pour in Alfredo sauce, Romano cheese, and cream; bring to a simmer stirring constantly until thickened, about 5 minutes. Season with cayenne, salt, and pepper to taste. Stir drained pasta into the sauce, and serve sprinkled with chopped parsley.

Baby Corn and Mushroom Salad

A colourful selection of vegetables dressed with a delicious blend of garlic and basil.

Ingredients:

  • 1/2 cup spring onion cubes
  • 1/2 cup fresh mushrooms (khumbh), sliced
  • 1/2 cup blanched and cubed baby corn
  • 3/4 cup bean sprouts
  • 1/2 cup red and green capsicum cubes
  • 1/2 cup cucumber cubes

For the dressing

  • 1 tbsp olive oil
  • 3 cloves finely chopped garlic (lehsun)
  • 1 tbsp finely chopped fresh basil leaves
  • 2 tsp lemon juice
  • 1 tsp sugar
  • salt and black pepper (kalimirch) powder to taste
  • Method

For the dressing

  1. Heat the oil in a non-stick pan, add the garlic and sauté till it browns lightly.
  2. Add the basil leaves and mix well. Cool completely.
  3. Add the lemon juice, sugar, salt and pepper and mix well.

How to proceed

  1. Combine all the ingredients in a bowl and toss lightly. Refrigerate.
  2. Just before serving, add the dressing to the salad and toss well.
  3. Serve immediately.

Always prepare and pack your meats separate from all other foods. If you're traveling, meat should be packed in a leak-proof bag that stays on ice. Make sure that meat gets cooked all the way through and leftovers go straight into the cooler. And be sure to keep a stash of antibacterial wipes or gels on hand.

Park Safety Tips

An afternoon at the park is a lovely way to spend a lazy summer day, and a wide expanse of green space gives kids a much-needed opportunity to run around. The Ultimate Cleaning Your House with Salt Quiz

Salt is one of those great chemicals that sits around underappreciated. You know you can use it to make your potatoes and gravy taste better, but did you know you can also use it to make plaster? Did you know you can use salt to clean a carpet? Take our quiz and discover the many ways in which you can use salt to help keep your home clean.

  • Salt and turpentine combine to make a paste that cleans enamel very well. You can use it to clean your sink, your bathtub or your toilet bowl.
  • If you're using a salt and turpentine paste to restore enamel, you should let it sit for about 15 minutes before you wipe it off.
  • Salt and gravy mix better on mashed potatoes than on carpet. Remove as much of the gravy as possible, then apply the salt to the carpet to fight the stain.
  • You will need 80 percent rubbing alcohol and 20 percent salt to fight grease stains on a carpet.
  • You will need to rub your alcohol and salt mixture into the carpet with a bit of force, but rub in the direction of the carpet's nap, or you might remove more than just the grease stain.
  • You need not panic just because you spilled blood-red wine all over your gorgeous new carpet. Simply sprinkle the stain with salt, and let the salt soak up the wine for about 15 minutes.
  • After the salt has soaked up what it can -- 15 minutes should do it -- mix 2/3 of a cup of water with 1/3 of a cup of vinegar and use the concoction to clean the carpet.
  • Wicker should be cleaned using salt water and a stiff brush.
  • The best way to dry wicker furniture is in direct sunlight.
  • You can remove ugly water damage from wood by mixing salad oil and salt; use the resulting paste as though it were wood polish.
  • Pewter is an extremely soft metal and it can be scratched very easily. Always clean pewter items gently.
  • Mix 1 cup of vinegar with 1 teaspoon of salt and enough flour to create a smooth paste.
  • Apply the pewter-cleaning paste gently, and let it sit for about 30 minutes. Remove with warm water and a soft cloth.
  • Rather than spending a bunch of money on a huge bucket of plaster, when all you need is a little bit, use this recipe to create a plaster substitute.
  • You can use a strong saltwater solution to stop candles from dripping. Soak them for several hours and let them dry.
  • When you throw salt onto a flame, the flame takes on a bright, yellow color.
  • Interestingly enough, the paste you make out of salt, water, and cream of tartar is great for removing rust.
  • Cream of tartar works best, but if you can't find any, you can make a paste out of lemon juice and salt instead.
  • So-called hard water has too much calcium and magnesium. You use special sodium pellets to remove these minerals and "soften" the water.
  • If you notice a lot of water spots on your dishes and glassware, it's likely you're dealing with hard water.
